If anyone has a really good fish or hushpuppie recipie I would really like to try it out.

For those of you who follow country music, Betty is Blake Shelton's aunt....and, her husband is the fishing buddy of a friend. I got this recipe from him.

- 1 box of Jiffy Corn Muffin Mix (about 8.5 Oz.) Betty says if you try to make this recipe using regular cornbread mix, it will never get done in the center.
- 1 small can of Rotel tomatoes with Green Chiles, juice and all. (this and the egg will be your only moisture in this mix, so don't spill it)
- 1 can of whole corn drained well.
- 1 egg
- 1 large onion minced (Betty says, the hotter the onion the better, and she don't like hot foods!)
- Some finely chopped pickled nacho jalapeno peppers
- 1 cup of flour to use as thickener.
Mix all ingredients together, then use flour to thicken. Betty says likely about a cup of flour.
If you need to make several hushpuppies, simply double or triple all ingredients above.
Betty uses one of those little melon baller scoops with the ice cream trigger on it, and she adds flour until she get's it thick enough. It just scoops out kind of like ice cream.
I've made these often and you can get them tuned up to where you can load a cooker up in a hurry with that little melon baller. Just make sure you get fairly close to the hot grease before you hit the trigger, or you will get splashed.
